So the star of these 3 game day snacks will be fresh prawns and a can of Maesri curry paste. No, we are not making a prawn curry and yes, you don’t just have to make a curry from a curry paste – Saba of @sabablacksheep
All you will need
Maesri curry paste
Fresh prawns
Spring roll wrappers
Beaten egg
I’m only making 6 but because it’s so easy you will be able to adjust the amount of ingredient to accommodate the amount you wish to make.
Step 1. Peel and devein the prawns leaving the tail on.
Step 2. Take some curry paste and spread it over the de-shelled portion of the prawn.
Now place one of the prawn horizontally across the folded corner leaving the tail of the prawn exposed outside the spring roll wrapper.
Take the corner of the wrapper closes to you and fold it over to cover the prawn.
Now take the right corner of the roll and fold it over the prawn.
Dab your finger in the beaten egg and use as glue around the remaining corner.
Roll the prawn as tight as possible into a cigar shaped cylinder.
1 tablespoon Maesri curry paste
100mls coconut milk
1 fresh chili crushed
2 teaspoons palm sugar
1 teaspoon fish sauce
1 tablespoon crush roasted peanuts
1 teaspoon lime juice
Step 2. Now add the remainder of the coconut milk, chili, palm sugar (grate it in if using a block of sugar) stir and combine until sugar has melted.
Step 3. Now add your fish sauce, peanuts and finish off with your lime juice. Give it another stir to combine. Turn of the heat and leave to cool.
Your sauce is ready to serve alongside your prawn springrolls.
I like wrapping the spring rolls in some lettuce and herbs but they are great just on their own too!!
So these butterflied prawns are so easy to make, taste delicious and are something I often make for game day.
This is what you will need.
Maesri curry paste
Fresh prawns
Flour for dusting

Step 1. Peel and devein the prawns leaving the tail on.
Step 2. Take a knife and slice along the back of the prawn slicing almost all the way through. Then using your fingers gently flatter the prawn out, ensure not to break the tail.
Step 4. Rinse, clean and pat dry the prawns.
Step 5. Season with salt and pepper, take some curry paste and spread it over the top portion of the prawn.
B. Dip the prawn in the egg and shake off any excess egg.
I like to serve these butterflied prawns with a simple soy sauce with some freshly sliced chili.
This is what you going to need
1 tablespoon Maesri curry paste
10 fresh large prawns, peeled and deveined THEN chopped
2 fresh spring onions chopped (white part only)
2 teaspoons sugar
1 teaspoon fish sauce
1 tablespoon corn starch
Pinch of pepper
1 small egg
Step 1. In a small food processor add all your ingredients and whiz until it becomes a thick paste.
Step 2. Transfer paste into a bowl and cover with cling wrap.
Step 3. Let rest in the refrigerator for 15 minutes.
Step 4. Roll the paste into balls. I like golf balls size balls (*note these will expand when we fry them)
Step 5. Now once you have made all your balls, it time to crumb them.
So you know how it goes, flour, egg them crumbs..
You’re going to need some plain flour, beaten egg and some panko crumbs.
For the egg mix I used one egg and 1 tablespoon of milk
For the bread crumbs we are using our panko
crumbs of course
Step 6. roll the ball in the flour and shake off any excess flour
Step 7. using the same hand dip the ball in egg mix and drain off any excess
Step 8. firmly roll the ball in the panko crumbs until completely covered, transfer to a plate and lay out in a single layer.
On your next game day serve these dishes in a large platter with some lettuce, fresh herbs, peanuts, lime and Lion Brand thin noodle sheets. Your friends will enjoy wrapping and dunking these prawn dishes so much they won’t even care who wins the game hahahaha.
