  • Bird Eye Chillies (10)

  • Megachef Fish Sauce (2 tablespoons)
  • Snake Bean (100 grams)
  • Thai Eggplant (2)
  • Cherry Tomato (5)
  • Palm Sugar (2 tablespoons)

For Grilled Chicken:

  • Chicken Maryland (1 piece)
  • O-Cha Garlic Coriander Pepper (1 cube)
  • Megachef Oyster Sauce (1 tablespoon)
  • Megachef Soy Sauce (1 tablespoon)

Side Dishes:

  • O- Cha Pickled Mustard

The Story Behind Som Tum Tard: ส้มตำถาด

Papaya Salad, a Thai favourite, gets a festive twist with Som Tum Tard. This dish, enjoyed in groups or savoured solo, has become a popular choice for celebrations. The concept is simple – gather an array of sides that complement Papaya Salad and showcase them on one tray. Think boiled eggs, seafood, fried chicken, pork crackers, and more. The key is to add crispy elements and additional cured meats or veggies. In our version, we’re pairing it with sticky rice, creating a delightful combination.

  1. Papaya Salad:
  • Start by preparing the green papaya. Use a papaya salad peeler and slicer if handling a sharp knife isn’t your thing.
  • Crush bird eye chilli and garlic in a mortar.
  • Add sliced Thai eggplant, tomato, and chopped snake beans.
  • Flavour the mix with palm sugar, fermented anchovy sauce, lime juice, and a touch of fish sauce. Be cautious with the fish sauce; the saltiness is already present in the fermented fish sauce.
  • Toss in shredded green papaya and mix well in the mortar.

 

  1. Plating:
  • Take a scoop of sticky rice and Lion rice vermicelli Bun Tuoi on the plate.
  • Follow with slices of boiled pork roll (or cocktail sausage as an alternative).
  • Add chopped pickled mustard and our papaya salad.
  • Finish it off with a generous sprinkle of bean sprouts.

4. Grilled Chicken:
Marinate chicken Maryland or thigh with O-Cha Pepper Garlic Coriander. One cube is all it takes for flavourful chicken.
Add oyster sauce and soy sauce, massaging the chicken well to infuse all the flavours.
Grill the chicken on a pan or in an air fryer.
Chop the chicken into pieces and get ready to serve alongside your Som Tum Tard.
