Laab ลาบไก่
Ingredients
- 200g minced meat (pork, chicken, duck, beef)
- Handful sliced coriander
- Handful mint
- 2 tbsp Megachef Fish Sauce
- 25g sliced red onion
- 1 tbsp toasted rice powder*
- lime juice to taste
- Ground dried chilli to taste
- Lion Brand Jasmine Rice/Lion Brand Glutinous Rice
Directions
- Cook mince over medium to low heat until the meat is done.
- Take pan off the heat and add red onion, coriander and mint
- Combine with Megachef Fish Sauce, lime, rice powder
- Garnish with dried chilli
- Serve with Lion Brand Jasmine Rice or more traditionally with Lion Brand Glutinous Rice
*Toasted rice powder or khao kua is the essential ingredient in Larb. Use half a cup of raw Lion Brand Glutinous Rice and evenly toast rice in pan over medium to low heat. Allow to cool and grind in a mortar and pestle until a fine powder is achieved. Store in an airtight container
