Ingredients

For this recipe, you’ll need:

  • 1 ½ tbsp Maesri Nam Prik Pao
  • 1 tbsp Vegetable Oil
  • 1 tbsp Oyster Sauce

  • 2 cloves Garlic
  • 6 Tiger Prawns
  • 1 cup Lion Jasmine Rice (cooked and left overnight)
  • 1-2 Kaffir Lime Leaves (finely sliced)

  • 1 Lion Rice Paper 22cm
  • Cos Lettuce for garnish

Instructions

Fried Rice

  1. Add vegetable oil to a pan and heat it up. Then, add sliced garlic and sauté until fragrant.
  2. Add a spoonful of Nam Prik Pao to your liking, then toss in the deveined tiger prawns.
  3. Season with oyster sauce and fish sauce, stirring well to combine.
  4. Add the steamed rice, breaking up any clumps. Stir in the chopped bird-eye chillies, spring onions, and kaffir lime leaves.
  5. Stir well until the rice and ingredients are evenly mixed and cooked through.

Crispy Rice Paper

  1. Cut the rice paper into four pieces and heat oil in a pan.
  2. Once the oil is hot, add the rice paper pieces and fry quickly until they puff up and become crispy.
